Summer means strawberries…

Rhodes celebrates strawberries by having a festival dedicated to all things strawberry. This year it will be held on Sunday 11th May and will start at midday in the playground area of Paradisi High School. It’s such a lovely way to spend the afternoon. Visitors are invited to try lots of delicious strawberry treats and enjoy traditional Greek dancing and music.

The strawberries are all locally grown and like all brightly coloured fruit are high in antioxidants and phytonutrients.

If you buy too many then a really great way to use them up is to make a simple strawberry coulis. Delicious in yogurt and poured over ice-cream.

Strawberry Coulis

1 cup strawberries
1/4 – 1/2 cup of sugar
1 tbsp lemon juice

Place everything in a saucepan and bring to a gentle boil and then puree until smooth. Can be stored for a week in a sealed container in the fridge.
